Kale-A-Palooza: Kale and Mushroom Flatbread

In my haste to post the video of Dorothy of FBLA and Shockingly Delicious…

And my excitement about the temporary relief I felt from the kale elixir…IMG_6189

I totally forgot to post what I brought to Kale-A-Palooza: my kale and mushroom flatbread.  So here goes:

  • 1 bag Cut and Clean Kale
  • 1 red onion chopped
  • 4 cloves of garlic chopped
  • 1 blood orange zested and juiced
  • 1 pkg. Trader Joe’s pizza dough.
  • 1/4 pound comte cheese grated
  • 8 oz Crimini mushrooms

In a medium saute pan heat a splash of olive oil, then add onion and garlic.  Sauté for about 1 minute.  Add kale, stir.  Pour juice of blood orange, and sauté for about two minutes.  If the kale is too dry add a splash of water.  Add blood orange zest.  Season with salt and pepper, and continue to cook until kale is just wilted.

Stretch the pizza dough on a half sheet pan.  Spread the kale on the dough. Then the mushrooms and then the cheese.IMG_6108

Bake at 400 degrees for 10 minutes.
