And my excitement about the temporary relief I felt from the kale elixir…
I totally forgot to post what I brought to Kale-A-Palooza: my kale and mushroom flatbread. So here goes:
- 1 bag Cut and Clean Kale
- 1 red onion chopped
- 4 cloves of garlic chopped
- 1 blood orange zested and juiced
- 1 pkg. Trader Joe’s pizza dough.
- 1/4 pound comte cheese grated
- 8 oz Crimini mushrooms
Slice onions and zest orangeSlice mushrooms and grate cheese.
In a medium saute pan heat a splash of olive oil, then add onion and garlic. Sauté for about 1 minute. Add kale, stir. Pour juice of blood orange, and sauté for about two minutes. If the kale is too dry add a splash of water. Add blood orange zest. Season with salt and pepper, and continue to cook until kale is just wilted.
Stretch the pizza dough on a half sheet pan. Spread the kale on the dough. Then the mushrooms and then the cheese.
Bake at 400 degrees for 10 minutes.
